Easy Three-Cheese & Tomato Tart

This three-cheese and tomato tart is a perfect blend of creamy ricotta, salty feta, and sharp cheddar, all wrapped in a crisp, savoury crust. Topped with juicy, caramelised heirloom tomatoes and fresh herbs, it’s a simple yet stunning dish—perfect for brunch, a light lunch, or an elegant appetiser.

Ingredients

For the Crust

  • 250g plain flour
  • 50g cheddar, finely grated
  • 1 pinch salt
  • ½ tsp ground black pepper
  • 100g unsalted butter, melted and cooled
  • ⅓ cup full-cream yogurt + 2 tbsp water

For the Filling

  • 300g ricotta
  • 200g feta, crumbled
  • 1 tbsp thyme leaves, plus extra to scatter
  • 1 lemon, zested
  • 500g mixed heirloom tomatoes, thickly sliced
  • Basil leaves and lemon wedges, to serve

Method

1. Make the Crust

  1. In a large bowl, mix the flour, cheddar, salt, and pepper.
  2. Add the melted butter, yogurt, and water, stirring until combined.
  3. Bring the dough together and knead gently until smooth. If too crumbly, add a little more water.
  4. Press the dough evenly into a 23cm fluted tart tin, using a measuring cup to smooth the base and sides.
  5. Trim any excess dough with a sharp knife and chill for at least 1 hour.
  6. Preheat the oven to 180°C (fan-forced).
  7. Bake the crust for 15–20 minutes until light golden. If it puffs up, gently press the center down with a spoon. Set aside to cool.

2. Prepare the Filling

  1. In a bowl, mix ricotta, feta, thyme, lemon zest, and season with salt and pepper to taste.
  2. Spread the cheese mixture evenly into the cooled tart shell.

3. Assemble & Bake

  1. Pat dry the sliced tomatoes with paper towel to remove excess moisture.
  2. Season with salt, pepper, and extra thyme leaves, then layer them over the ricotta filling.
  3. Drizzle with olive oil and bake for 35–40 minutes until the tomatoes are soft and caramelized.
  4. Dab away any excess liquid with paper towel and let the tart rest for at least 20 minutes.

4. Serve & Enjoy

Top with fresh basil leaves and a squeeze of lemon juice. Serve warm or at room temperature for the best flavor.

This tart pairs beautifully with a crisp white wine or a simple green salad—a perfect dish for any occasion!
