Whip – Roasted Fig Tart with Whipped Feta, Honey & Orange

This roasted fig tart is a luxurious balance of sweet and savory, combining caramelized figs, silky whipped feta, and the bold richness of gorgonzola. A drizzle of honey and a touch of orange zest elevate the flavors, making this the perfect dessert (or indulgent appetizer!) for any occasion.

Ingredients

For the Shortcrust Pastry

  • 225g plain flour, plus extra for dusting
  • ¼ cup caster sugar
  • 125g unsalted butter, melted and cooled
  • 2–3 tbsp cold water

For the Filling

  • 6 figs, halved
  • 1 tbsp sugar (for roasting figs)
  • 250g soft feta, crumbled
  • 250g cream cheese, at room temperature
  • 250ml thickened cream
  • 2–3 tbsp honey, plus extra for drizzling
  • 1 orange, zested
  • 250g gorgonzola, crumbled and frozen on a tray

Method

1. Prepare the Pastry

Preheat the oven to 180°C (fan-forced). In a bowl, mix the flour, sugar, and melted butter until combined. Add cold water, one tablespoon at a time, until the dough comes together. Roll out on a floured surface, then press into a tart tin. Prick the base with a fork and bake for 15–20 minutes or until golden. Let cool completely.

2. Roast the Figs

Place the fig halves on a lined baking tray, sprinkle with sugar, and roast for 10–15 minutes until soft and caramelized. Let cool.

3. Make the Whipped Feta

In a bowl, whip together the feta, cream cheese, and thickened cream until smooth and fluffy. Add honey and orange zest, then whip again until fully combined.

4. Assemble the Tart

Spread the whipped feta mixture evenly over the cooled tart base. Arrange the roasted figs on top. Drizzle with extra honey, then scatter over chunks of frozen gorgonzola for a bold, creamy contrast.

5. Serve & Enjoy

Let the tart sit for a few minutes to allow the flavors to meld. Slice and serve as a decadent dessert or a unique cheese-course alternative.
